Classification: Vermentino of Sardinia DOC (Controlled Designation of Origin) Grape Varieties: Vermentino 100% Place of origin: Audarya vineyard, in Serdiana Soil: clay-limestone soil at about 200 meters above sea level Climate: Mediterranean, limited winters rainfalls; sunny and windy summers. Average age of the vineyard: 25 years Training system: Espaliered bushes. Implantation density of 5000 plants for ha and production of 60 – 70 quintals. Harvesting: by hand, in small baskets of 20 kg each and grapes selection in the wine
cellar. First week of September Winemaking procedure: one night of cold maceration for this Vermentino characterized by an excellent skin ripeness. After, there is the soft pressing and the cold, natural decanting. It has a slow fermentation in stainless steel temperature controlled vats. It closes with 6 months of aging on hits fine lees, so mature and get an important structure.
Tasting Notes: Colour: strong straw yellow Nose: salt rock scents, citrus and white peaches Palate: the sip is savoury and with a slight almond finish, in a centred and enjoyable
context.
Storage: Light controlled, horizontal bottle, constant temperature 17°C and humidity 70%. Serving temperature 9 – 11°C Food Matches: fregola (Sardinian pasta) with tellin, roasted fish, shellfish, fresh pecorino (Italian sheep’s milk cheese).
