Isola dei Nuraghi IGT
Classification: Isola dei Nuraghi IGT Grapes: 80% Carignano, 15% Cannonau and 5% Bovale Origin: Vigna Audarya Serdiana Soil: calcareous – clayey soils at 200 meters above sea level. South-west exposure Climate: Mediterranean, low winter rainfall and breezy and sunny summers. Average age of the vines: 30 years. Training system: low espalier tree. Planting density of 5000 vines per hectare and production of 35 – 40 quintals. Harvest: the different varieties are harvested separately with manual harvesting. End of September-First ten days of October. Vinification: maceration at a controlled temperature and subsequent alcoholic fermentation at a temperature of 26-28°C.
Malolactic fermentation takes place in French barriques in which the wine completes its aging cycle for the following 18-24 months. Color: deep ruby red. Smell: rich and complex. Taste: Balanced, intense, persistent and fine. Of great structure. Harmonic. Storage: protected from light, with horizontal bottle. Serve at a temperature of 18-20°C. Pairings: second courses of game and red meat, roasts, mature cheeses. Wonderful for meditation.
